    This independent bottling of Caol Ila by Signatory was distilled in 1983 and bottled in late 2015, making it almost 32 years old. It tastes of gentle peat, marmalade, and very balanced wood spice. Only 144 bottles were produced.

This method of maturation lends a fine sherried character, balanced with rich chocolate, toffee, cinnamon and ginger spiciness on the palate.

A’Bunadh is a special release from Aberlour. It is exclusively aged in first-fill Spanish Oloroso sherry butts, giving it a sweet and soft character. The aroma includes dried fruits, marmalade, baking spices and nuts. The palate confirms the nose but adds caramel, butterscotch and bittersweet chocolate.

    Crafted using organic and biodynamic grapes from California, and certified organic wormwood, anise, fennel, and coriander from Oregon. Different from other absinthe in that it uses FRESH wormwood instead of dried. It has a very pleasant natural sweetness. Delicious part of any cocktail requiring absinthe and great with just some water as well.

    Japanese whiskey is all the rage, but this little guy gets overlooked for all the big name single malts. Formerly a producer of shochu and sake, the distillery began making whiskey in 1984. Like many Japanese whiskeys, this malt and grain blend shines with the addition of water. Try it with seltzer as a highball and enjoy with a meal or as an aperitif.

    Alipus was started by Los Danzantes to provide a market for family artisan distilleries. Hector Vasquez and later Karina Abad Rojas have worked closely with selected small producers, both to improve their distillation methods and to help them with the complex paperwork required to certify their mezcals for export. The intent was to provide small distilleries with a wider market so that they could stay in business, and it has worked. Alipus, like a lot of other mezcal lines, releases village-specific mezcals to showcase the unique style of each distiller. Fragrant on the nose, fruity and floral. On the palate, citrus fruit appears with orange and grapefruit notes. Some baking spice notes and black pepper are well balanced by gentle smoke.
