Plantation Pineapple Rum Stiggins’ Fancy is a pineapple rum created by infusing ripe Queen Victoria pineapples in rich, aged Plantation Original Dark Rum for 3 months. The pineapple rind (where the pineapple’s essential oil chiefly resides) was macerated in rum and then distilled, thus creating a bright pineapple essence to blend with the lushness of the infused Plantation rum. Those two were then blended and aged further in barrels together. It is a rum with pineapple notes, rather than a pineapple-y rum.
