• You love single malts. Virginia is for lovers. You will love this Virginia Single Malt. I don’t think I can say it any better.

  Virginia Distillery Company (VDC) was founded in 2011 by the Irish born Dr. George G. Moore. After his death in 2013, his wife and children have operated the distillery. Along with the entire Moore family, the late Dr. Jim Swan contributed to the development of VDC.
  
  Distillation begins with high quality barley and spring water from the Blue Ridge Mountains. Once distilled, maturation occurs in ex-bourbon barrels from Kentucky, ex-sherry barrels and an ex-Cuvee barrel of European red wine that goes through the “STR” process, which I suspect is Dr. Swan’s influence. While he didn’t invent the process, he definitely stressed the importance of it! In case you are unfamiliar, STR happens after wine is removed from its cask. The cask is broken down, its interior shaved, re-toasted, and re-charred. Then the staves are put back together as a barrel. This re-toasting and re-charring of the cask energizes the wood sugars and brings forward deeper barrel spices and fruit notes. 

  This a custom Single Malt, blended from three different barrels from Virigina Distillery Co., made specifically for the Cask. It contains 20% Bourbon Cask, 40% Cuvee and 40% Sherry.

  With strong barrel influence there is a lot to smell and taste in this single malt. Start with a nose of mixed berry cobbler, light malted barley, vanilla scone, sweet cream, brown sugar, peachy, raisin, fruity gummies. On the palate we find more barley, along with sweet oak, fresh apricots, toffee, and vanilla. It has a light body finish where I find mocha, demerara sugar, spicy cinnamon sticks, and clove.
