  • This is an ensamble of Bicuishe, Coyote, Madrecuixe, and Tepextate bottled by Mezcalosfera. Mezcalosfera is the export brand created by Silvia Philion of Mezcaloteca. Founded in 2010, Mezcaloteca is arguably the most famous mezcal tasting room in Oaxaca City. With a hyper-focus on mezcal education, Silvia founded Mezcalosfera with the intent of sharing producer-driven, extremely limited, small-batch agave spirits with an international audience. 
    This ensamble was distilled in Miahuatlan, Oaxaca by maestro mezcalero, Felipe Cortes. Felipe, a 3rd generation mezcalero, works closely with his son, Ageo. Their land adjacent to the palenque has many agaves both wild and cultivated, including espadin, tepextate, tobala, verde, madrecuixe, and bicuishe, specializing in the latter two. 
    These high elevation agaves were roasted in the traditional earthen pit using mesquite and cypress wood. The cooked agaves are then crushed by tahona before undergoing wild yeast fermentation with well water in cypress vats. Two distillations took place on a copper refrescadera before being adjusted with a small amount of heads. It was then placed in glass to rest for 3 years before bottling. 
    Look for subtle citrus flavors of grapefruit and lime. Earthy notes of terra cotta, dried straw, and mesquite with a long savory finish of caramelized agave and pipe tobacco.270 Liters produced. 48.4% ABV
