  • The Crémant du Jura from Jean-Luc Mouillard is comprised entirely of chardonnay and is fermented in the bottle, with the wine going through full malo and spending a minimum of twelve months aging sur latte prior to disgorgement. The current release offers up a stylish nose of pear, apple, chalky minerality and freshbaked bread. On the palate the wine is young, bright and full-bodied, with a fine core of fruit, pinpoint bubbles, snappy acids and lovely backend minerality on the long and nascently complex finish. This is on the young side and could do with a bit of bottle age to allow the acids to soften a bit, but there is depth and nice balance here and I suspect with a couple of years in the cellar, this will approach the quality of many non-vintage Brut Champagnes.
