  • Baltimore Spirits Co is making some wildly creative products, but their Oaxacan inspired apple brandies are showstopping. Kindled by their appreciation for mezcal and its particular methods of production, the distillers sought to make a local product in the same style, but using Maryland apples. This seasonal release begins the same way as the smoked apple brandy, with the juice being pressed by the orchard, and the cores and skins smoked for eight hours before returning to the juice for fermentation. 

    Mexican Pechugas are traditionally made to celebrate the bounty of the season, and contain local fruits and often a protein such as a chicken breast or lamb leg. In the spirit of this, the Baltimore distillers travel to the Maryland countryside and forage for local flavors: paw paw, persimmon, and black walnut. The final run on the still is done with not only these fruits in the distillation chamber, but also with a Maryland Country Ham suspended in the still above the pot. The ham gives a subtle salinity and savory note to the final product, distilled to proof. Very savory, with almost a fat washed quality. In a blind tasting, this could easily be mistaken for an agave spirit.
