“China” has nothing to do with the country in this case; rather it references the bittering agent “cinchona” native to Peru. Macerated in a neutral beet distillate, redistilled, re-flavored, and sweetened. Very smooth despite its 40% abv and tastes like bitter orange and cherry at first. Bigallet has a medium bitterness, also tastes of anise, and a hint of clove and cinnamon.
