  • Tepextate by Sergio Juarez Patricio from the village of San Agustin Amatengo in Oaxaca. Almost 6 tons of wild Tepextate were harvested for this batch, of which only 170 liters were produced. 

    The pinas were roasted in a traditional underground oven for three days using mesquite, guamuche, and encino wood. The pinas were then crushed by a tahona, and the juice was fermented with local spring water in cypress tanks for one week. After fermentation, it was double-distilled in a copper refrescadera alembic before being proofed down to 48.8% abv with distilled spring water.
